So, after the venison casserole in January, and the peanut butter and chocolate chip cake in February, for my new recipe this month I, again, turned to the BBC Good Food magazines my daughter got me all last year.

But this time I tried something very, very, easy.

I had some minced beef in the freezer to use up - and decided to make Beef and Bacon Meatloaf. This is one of their 'five ingredient' recipes - and even then they were pushing it, as one of the five was the oil to brush the tin!

But it is really nice. D-d and I had it with some roast butternut squash, and roast tomatoes/peppers/onions. And it looked quite a lot like the one in the illustration for the recipe, too -

Definitely one to make again!

Hm, looks like some thing the B.H. might try, of course he will insisting adding stuff to it!

I am very pleased with myself, after a frustrating few minutes trying to transfer some c.d.'s I had just ripped from My Music to media player so I could sync them to the mp3 player I finally figured it out with a little bit of help from the B.B. one just opens both and transfer the file to be copied to media player and syncs it to the player and in the process it some how jumps to media player. Yay!

I am getting ready for a day at the hospital waiting on B.H. having a 'procedure', it's not until 2.30 p.m. so goodness knows what time we will get out of there and then a one hour ride home on top of it! Why his Dr. had to move I don't know but it is very inconvenient all around.
Oh, well rant over, sorry!

Will definitely try the meat loaf.

Lynda

The way modern technology just syncs itself is great, isn't it? My phone did it with my computer to my great amazement, and pleasure.

Hope the day at the hospital went well.

The procedure isn't until Tuesday, I have a feeling we will be lucky to be out of there by midnight, we have to be there by 2.30 p.m. surgery isn't until 4.oo p.m., by the time they have futzed around who knows how long it will be!?

That does look good-- might have to try it myself!

And roasted butternut squash sounds like the perfect side. Mmm!

It was very, very, easy. As long as you can get stuffing mix; I'm not sure whether it is a very British thing or not.

For got to mention the menu for today, Roast Pork Loin, with red skin potatoes, baby carrots and the first asparagus of the season, that I can afford, at 99 cents a pound not to be passed up! Plus, of course, gravy, apple sauce and French bread followed by Turtle crème pie, caramel chocolate pie, not mine I picked it up at the Commissary today.

That sounds a good deal posher than ours! I don't think asparagus ever gets that cheap here, sadly.

My husband would like that! So would my son with all that bacon.

The smoked bacon really added to the taste - that and the herbs and onions in the dried stuffing mix.

That looks very yummy but I can't get the stuffing mix here. I might be able to mix up something similar, though.

There's not a lot in stuffing mix apart from dried bread crumbs, dried onions, sage and salt - so fresh bread crumbs, chopped onion and some sage, with less stock, would work.

Yes, that's basically what I had in mind.

Once again, I am amused at the small differences between words and usage in different English speaking countries. We call minced meat ground meat. To me it sort of implies a different method for producing it. Mincing to me seems like a very fine dice, whereas ground implies putting the meat through a mechanical grinder of some sort.

It is funny, isn't it, the difference in the way we use the same words for different things, and different words for the same things?

Whereas we would put it through a mechanical mincer - ground to us implies reduced to more or less a paste - like mechanically recovered stuff. We grind spices, or flour. Fine dice would be called 'chopped'.

I'm always on the look out for a different way to use mince - and if there's bacon involved, all the better! It looks great.

Dead easy - and very tasty.

S2C was most impressed that my one looked just like the picture in the magazine.

It looks delicious and very easy to make. I think I'm going to try it too. Love roast tomato/peppers and onions, and would love to try roasted butternut squash, you can't get them here.

It was certainly very east - and really tasty with the bacon in it. Also good cold - I had two slices with some salad this evening because I couldn't be bothered to do more vegetables.
