we used to make our own when my family lived on the Oregon Coast. You soaked it in a brine, then smoked it for days. People always looked forward to christmas as we usually gave them smoked salmon!

Smoked steelhead on the other hand I never developed a taste for. Though not a steelhead fan at all. bleh!
